Hi! Hope all is well...
Has you know, or will get to know, I'm a fan of deserts, sweets...
So today we are going to make a super delicious passion fruit cheesecake!
Passion Fruit Cheesecake!
Let's get started...


Ingredients

Dough

  • 200gr sweetened crackers.
  • 100gr Softened Butter.

Filling

  • 1 Package cream cheese.
  • 400ml milk cream.
  • 8 gelatin sheets.
  • 200gr caster sugar.

Topping

  • 5 tablespoons of passionfruit pulp.
  • 250ml water.
  • 2 tablespoons sugar .

Preparation

Dough

Pulse the crackers in a food processor until finely ground, add the butter and mix. Place a sheet of parchment paper in a springform pan and cover with the cracker mixture, Place in the fridge while preparing the rest of the layers.

Filling

Place the gelatin sheets in cold water to soften. Whisk the cream cheese and sugar for about a minute Add the cream and continue to whisk for another minute. Remove the excess water from the gelatin sheets and melt for 10 seconds in the microwave. Slowly add the liquid gelatin to the cheese mixture while whisking in low speed. Pour over the crust and make sure it has a smooth and leveled surface. Place in the fridge for a couple of hours, or until firm.

Topping

Cook all the ingredients in medium heat for about 5 minutes to thicken. Let it cool down and pour over the filling.

Simply delicious!
But be careful... the summer is near :)

Hello sweeties!!!!!!!
So today I want some sweet in my life, so I bring you the recipe to make some Brownies!
But these aren't the everyday ...

We are going to make some I want MOAR! Dark Chocolate Mint Brownies!

Ingredients

  • 1 2/3 cups of your favorite Dark Chocolate.
  • Peppermint extract.
  • 1/2 cup (1 stick) butter or margarine, cut into pieces.
  • 3 large eggs, lightly beaten.
  • 1 1/4 cups all-purpose flour.
  • 1 cup granulated sugar.
  • 1 teaspoon vanilla extract.
  • 1/4 teaspoon baking soda.
  • 1/2 cup chopped nuts.

Preparation

Directions Pre-Heat oven to 350° F. Grease 13 x 9-inch baking pan.
Melt 1 cup of dark chocolate and butter in medium, heavy-duty saucepan over low heat.
When dark chocolate and butter begin to melt, remove from heat and stir.
Return to heat for a few seconds at a time, stirring just until mixture is smooth.
Remove from heat.
Add one tea spoon of Peppermint extract. (its by taste, some like it more intense, other less)
Stir in eggs.
Stir in flour, sugar, vanilla extract and baking soda.
Stir in the rest of dark chocolate and the nuts.
Spread into prepared pan.

Bake for 18 to 22 minutes or until wooden pick inserted in center comes out slightly sticky.
Cool completely in pan on wire rack.
Cut into bars.

Eat! Serve with tea! Eat! :) delicious!

Hello,
This is a recipe for something that's is good at anytime... at least for me :)
Today we are going to make some yummi Waffles with a delicious dark chocolate sauce!!!
(Just hit the gym after...lol)


Ingredients

  • 2 eggs.
  • 2 cups all-purpose flour.
  • 1 3/4 cups milk.
  • 1/2 cup vegetable oil.
  • 1 tablespoon white sugar.
  • 4 teaspoons baking powder.
  • 1/4 teaspoon salt.
  • 1/2 teaspoon vanilla extract.

For the chocolate:

  • 60g good-quality dark chocolate.
  • 125mls (1/2 cup) think cream.

Preparation

Preheat waffle iron.
Beat eggs in large bowl with hand beater until fluffy.
Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
Spray preheated waffle iron with non-stick cooking spray.
Pour mix onto hot waffle iron.
Cook until golden brown.
Serve hot.

For the chocolate:

Place the chocolate, cream and brown sugar in a small saucepan.
Use a wooden spoon to stir over medium-low heat until the chocolate has melted and the sugar has dissolved.

After serve while hot...
Plate with waffle, drizzle with the chocolate souceeeeeeeeeeeeee....... yummi!

You can also put a scoop or two of Vanila ice-cream... :) Enjoy!

Hello,
Well I've been a little busy, but I'm back with a delicious burger
With bacon, gorgonzola and caramelized onions... Let's make them... yummy!

Ingredients

  • Extra virgin olive oil.
  • 1/3 pound good-quality slab bacon, chopped.
  • 3 large onions, thinly sliced.
  • Salt and pepper.
  • A splash of white wine.
  • 1 1/2 pounds ground sirloin or chuck, at room temperature.
  • 2 tablespoons fresh rosemary, minced.
  • 4 burger rolls, split and toasted.
  • 4 onion, sesame or poppy seed rolls, toasted.
  • 1/2 pound gorgonzola cheese, crumbled.
  • A few handfuls arugula or watercress.

Preparation

Heat a large skillet over medium-high heat.
Drizzle in Olive Oil.
Cook the bacon until almost crispy. Transfer to a plate and let cool.

Stir the onions into the bacon drippings and season with pepper.
Reduce the heat to medium-low and cook until caramel in color, about 30 minutes.
Season the onions with salt and deglaze the pan with a little wine.
Transfer to a bowl and cover to keep warm.

Meanwhile, combine the beef, cooled bacon, rosemary, salt and pepper.
Score the mixture into four equal portions and form them into patties slightly thinner at the center than at the edges for even cooking and to ensure a flat surface (burgers plump as they cook).
Coat the burgers with some olive oil.
Return the skillet to the burner and increase the heat to medium-high.
Add the burgers and cook, flipping once, for 8 minutes for medium-rare (adjust the timing for more well-done burgers).

 Place the burgers on the toasted rolls and top with the caramelized onions, some gorgonzola crumbles and spicy greens.
