Super easy and fast Guacamole Recipe!
Yeah, today I bring you a fast and delicious way to make your own Guacamole!
So, let's get hands on....


Ingredients

  • 1 medium ripe Avocado, halved, seeded and peeled.
  • 2 teaspoons lime juice.
  • 2 (3 ounce) packages cream cheese, softened.
  • 1/2 teaspoon Worcestershire sauce.
  • 1/2 teaspoon salt.
  • 1/4 teaspoon hot pepper sauce.
  • tortilla chips.

Preparation

In a small mixing bowl, beat avacado with lime juice add the cream cheese, Worcestershire sauce, salt and hot pepper sauce.

Beat until smooth serve with tortilla chips store in the refrigerator.

Let's get started with this Chili recipe!


Ingredients

  • 6 slices bacon.
  • 2 pounds ground beef chuck.
  • 1 large onion, chopped.
  • 1 large green bell pepper, chopped.
  • 4 cloves garlic, finely chopped.
  • Kosher salt.
  • 1/4 cup chili powder.
  • 1 tablespoon ground cumin.
  • 2 teaspoons paprika.
  • 2 teaspoons dried oregano.
  • 2 tablespoons tomato paste.
  • 1 12 -ounce bottle amber beer.
  • 2 tablespoons unsweetened cocoa powder.
  • 1 28 -ounce can whole plum tomatoes, crushed by hand.
  • 1 1/2 cups low-sodium beef broth, plus more if needed.
  • 2 15 -ounce cans black beans, drained and rinsed.
  • 1 tablespoon hot sauce.
  • Shredded cheddar cheese, sliced.

Preparation

Cook the bacon in a large saucepan or Dutch oven over medium heat until crisp, 6 to 8 minutes per side. Drain on a paper towel-lined plate and let cool, then crumble and set aside.
Pour off all but 1 tablespoon of the bacon drippings from the saucepan (reserve the drippings).
Increase the heat to medium high, add the beef and cook, breaking up the meat with a wooden spoon, until browned, about 8 minutes. Transfer to a plate using a slotted spoon; wipe out the pan. Heat 1 tablespoon of the reserved bacon drippings in the saucepan over medium-high heat.
Add the onion and bell pepper and cook, stirring, until soft, about 5 minutes. Add the garlic and 1 teaspoon salt and cook 2 minutes.
Add the chili powder, cumin, paprika, oregano and tomato paste and cook, stirring, until the tomato paste is brick red, about 6 minutes (add a splash of water if the mixture begins to stick).
Add the beer and simmer until almost completely reduced, about 3 minutes.

Stir in the beef and any juices from the plate; add the cocoa powder, tomatoes, beef broth and beans and bring to a simmer over low
Cook, stirring occasionally, until the chili thickens slightly, about 1 hour, 30 minutes.

Stir the hot sauce into the chili and season with salt.
Add some beef broth if the chili is too thick.
Ladle into bowls and top with the crumbled bacon, cheese, scallions and/or sour cream.

I love Pork!
So today I bring you a recipe of Pork Loin!
We are going to make a delicious Grilled Pork Loin And Pineapple Salsa!
Let's get hands on...


Ingredients

  • 1 tbsp tomato paste.
  • 1 tbsp chili powder.
  • 1/2 cup orange juice.
  • 3 tbsps fresh lime juice.
  • 1 tbsp olive oil.
  • 1 lb pork tenderloin (trimmed).
  • 1 golden pineapple (12 pounds diced into 1 inch cubes).
  • 1/2 cup pineapple juice.
  • 1 red bell pepper.
  • 1/4 red onion.
  • 1/4 cup fresh basil.
  • Vegetable oil cooking spray.

Preparation

Mix tomato paste with chili powder.
Combine with orange juice, lime juice and oil in a double resealable bag.
Add tenderloin and marinate at least 3 hours.

Heat a large pan over high heat to the smoking point, 3 to 4 minutes.
Brown pineapple 4 to 5 minutes, stirring occasionally.
Add pineapple juice and stir 1 minute, scraping up brown bits from pan.
Remove pineapple from heat.
Combine in a bowl with pepper, onion and basil.

Heat a grill or grill pan over high.
Coat with cooking spray.
Remove pork from marinade; place on grill.
Reduce heat to medium; cook, turning occasionally, until pork is no longer pink and internal temperature is 160°F 18 to 20 minutes. Let pork rest 5 minutes before slicing.
Spoon salsa over pork.

Serve with a awesome red wine, some fried chips and / or rice!

Hello,
Been a while since I posted something new to cook!
So here I am, today with a fresh easy recipe!
Let's make some awesome and delicious Chicken Kebabs With Pineapple and more...


Ingredients

  • 1 lb. (2) boneless skinless chicken breasts.
  • 1 bell pepper (any color).
  • 1/2 red onion.
  • 1 (20 oz.) can sliced pineapple.
  • 1/2 cup your favorite BBQ sauce.
  • Salt and freshly ground black pepper.

Preparation

Cut the chicken, bell pepper, red onion and pineapple into bite-sized chunks.
Place in separate bowls.

Start layering ingredients onto your kebabs, alternating chicken, bell pepper, red onion and pineapple chunks.
Place kebabs on a large plate or cutting board.
Repeat until you have 5-6 full kebabs.
Brush all evenly with 1/4 cup BBQ sauce, and sprinkle with salt and pepper.

Preheat your outdoor gas grill or grill pan to medium-high heat.
You can also do them in your normal oven or in a grill pan.

Once hot, place kebabs on grill and cook on all sides until chicken is cooked and vegetables have softened, 9-10 minutes.
With a clean brush, coat kebabs again with 1/4 cup more BBQ sauce.
Carefully remove from heat and let cool slightly.

Serve with a awesome red wine, some fried chips, some rice and a fresh salad!

Hello!
Today I felt like having a nice desert for dinner!

So I'm sharing with you this recipe, Sweet Mini Cheesecakes!
You will see how easy it easy and fun it is to make them...


Ingredients

  • 1 cup HONEY MAID Graham Cracker Crumbs.
  • 3/4 cup plus 2 Tbsp. sugar, divided.
  • 3 Tbsp. butter or margarine, melted.
  • 3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened.
  • 1 tsp. vanilla.
  • 3 eggs.
  • 1 cup whipping cream.
  • 2 cups blueberries.
  • 1 Tbsp. lemon zest.

Preparation

Heat oven to 325°F. Mix graham crumbs, 2 Tbsp. sugar and butter until blended.
Press onto bottoms of 18 paper-lined muffin cups.

Beat cream cheese, remaining sugar and vanilla with mixer until blended.
Add eggs, one at a time, mixing on low speed after each just until blended.

Spoon into crusts. Bake 25 to 30 minutes or until centers are almost set.
Let it cool completely and then refrigerate for 2 hours.

Beat whipping cream with mixer on high speed until stiff peaks form.
After spread onto cheesecakes.

Top with blueberries and zest.
Serve as desert of a nice dinner or just eat it :) eheheh...

Hi,
I'm back again with a nice fast and tasty dishe!
This recipe works either for lunch or dinner!
I call them Tasty Lemon Chili Pork Chops!
Let's get started then...


Ingredients

  • 2 tbsp fresh lemon juice.
  • 1-2 tbsp oil.
  • 1 tsp chili powder.
  • ½ tsp garlic powder.
  • ¼ tsp onion powder.
  • Salt & pepper to taste.
  • 4 boneless pork chops (thick).

Preparation

In a ziplock bag combine all ingredients except pork chops.
Squishy ingredients to combine.
Add pork chops and squishy some more.
Let stand on counter for 30 minutes to marinate or in fridge for longer.
Always let your meat warm up on counter for about 20-30 minutes before grilling.
Remove pork from marinade (toss marinade) and grill over low heat for 30 minutes (thicker chops) or until done.

Serve with some grilled potatos and veggies! :)

Today guess what?

I have a another awesome and delicious Pizza Recipe!

This time we are going to make a delicious Pizza with Bacon, Beef, Sweet Corn and Green Peppers!
 


Ingredients

For the base

  • 300g strong bread flour.
  • 1 tsp instant yeast (from a sachet or a tub).
  • 1 tsp salt.
  • 1 tbsp olive oil, plus extra for drizzling.

For the tomato sauce

  • 100ml passata.
  • Handful fresh basil or 1 tsp dried.
  • 1 garlic clove, crushed.

Toppings

  • 125g ball mozzarella, sliced.
  • 125g of Bacon.
  • 125g of Beef.
  • 50g of Sweet Corn.
  • 50g of Green Peppers.
  • Handful grated or shaved parmesan.

Preparation

Make the base:

Put the flour into a large bowl, then stir in the yeast and salt.
Make a well, pour in 200ml warm water and the olive oil and bring together with a wooden spoon until you have a soft, fairly wet dough.
Turn onto a lightly floured surface and knead for 5 mins until smooth.
Cover with a tea towel and set aside.
You can leave the dough to rise if you like, but it’s not essential for a thin crust.

Make the sauce:

Mix the passata, basil and crushed garlic together, then season to taste.
Leave to stand at room temperature while you get on with shaping the base.

Roll out the dough:

If you’ve let the dough rise, give it a quick knead, then split into two balls.
On a floured surface, roll out the dough into large rounds, about 25cm across, using a rolling pin.
The dough needs to be very thin as it will rise in the oven.
Lift the rounds onto two floured baking sheets.

Top and bake:

Heat oven to 240C/fan 220C /gas 8.
Put another baking sheet or an upturned baking tray in the oven on the top shelf.
Smooth sauce over bases with the back of a spoon.
Scatter with bacon, beef, sweet corn, green peppers and cheese, drizzle with olive oil and season.
Put one pizza, still on its baking sheet, on top of the preheated sheet or tray.
Bake for 8-10 mins until crisp.

This time we are going to make a delicious Pizza with Bacon, Chicken and Mushroom, with Carbonara Sauce!






Ingredients

For the base

  • 300g strong bread flour.
  • 1 tsp instant yeast (from a sachet or a tub).
  • 1 tsp salt.
  • 1 tbsp olive oil, plus extra for drizzling.

Carbonara Sauce

  • 2 tablespoons margarine or butter.
  • 2 tablespoons flour.
  • 1 cup milk.
  • 1/2 cup freshly grated Parmesan cheese.
  • 3/4 to 1 1/2 teaspoons hot pepper sauce.

Toppings

  • 125g ball mozzarella, sliced.
  • 125g of Bacon.
  • 125g of Chicken.
  • 100g of Mushrooms.
  • Handful grated or shaved parmesan.

Preparation

Make the base:

Put the flour into a large bowl, then stir in the yeast and salt.

Using wire whisk, stir in flour; cook until mixture is smooth and bubbly, stirring constantly.
Gradually add milk.
Cook over medium heat until mixture thickens and boils, stirring constantly.
Add Parmesan cheese and hot pepper sauce; stir until cheese is melted.

Roll out the dough:

If you’ve let the dough rise, give it a quick knead, then split into two balls.
On a floured surface, roll out the dough into large rounds, about 25cm across, using a rolling pin.
The dough needs to be very thin as it will rise in the oven.
Lift the rounds onto two floured baking sheets.

Top and bake:

Heat oven to 240C/fan 220C /gas 8.
Put another baking sheet or an upturned baking tray in the oven on the top shelf.
Smooth sauce over bases with the back of a spoon.
Scatter with bacon, chicken, mushrooms and cheese, drizzle with olive oil and season.
Put one pizza, still on its baking sheet, on top of the preheated sheet or tray.
Bake for 8-10 mins until crisp.

Now for the 1st recipe of 2014 we are going to make a super easy recipe!
A delicious Ham Pizza!
Note: this recipe will also serve has base for other pizza recipes on my blog.
Why? Well simply because in this one I'm going to explain how to make a good Pizza Base.
So, let's get hands on!
